Only one lower cabinet...would you do it?

Sooooo...I'm considering changing some lower cabinets to pull-out drawers. Currently the design calls for 2 deep drawers, 4 shallow drawers, a corner cabinet, and 3 lower cabinets (not including the cabinet below the sink)
The pot/pan drawer is beside the range/oven and the cabinets I'm thinking of changing would move the dishes down from the walls but this would leave me with only 1 lower cabinet (I think 30" wide).
We do have young children if that makes a difference. We also have a walk-in pantry to store all our food. I'm thinking we can use the uppers for less used items.
Also, our work area is not huge...I think about 5' between the U shaped cabinets (12'8 w x 9' L opening to eat in).
Any pros/cons, advice or suggestions? The change would cost $500...not much really if it will create a better flow.
