I planted bunches of eggplant this year so I can freeze a bunch. I peel the eggplant, slice it, drip it in egg, then cover with italian flavored bread crumbs and parmesan cheese mixture and bake it on an oiled cookie sheet at 400 for 10 minutes per side. Let them cool on a rack and then freeze. To make pull out what you need, add spaghetti sauce and cheese. You could also use a white sauce with italian spices if you get tired of a tomato based sauce. Or maybe a cheese sauce with spinach. Just experiment.
