Stuffed Strawberries

Hey all!

Several people mentioned they were curious about the stuffed strawberries I am making (made?) for this weekend. Here they are...

They are super easy and adapt well to any sort of flavoring you want to include. These are the "basic" model...

Hull the strawberries, cut a flat bottom and then cut a notch in the pointy end.

Mix together 1 package softened cream cheese, about 1/2 cup of creme freche, about 1/2 cup (more or less) of powdered sugar and a 1/4 tsp of almond extract. Mix until it is a consistency and level of sweetness you like. I usually grate a little dark chocolate over the top, but my friends fiance doesn't like chocolate (heathen! LOL) so I left it off.

Some variations I've made are (leave the almond extract out):

Grand Marnier and orange zest
Chocolate extract and Godiva liquor
White chocolate (melt it a little and mix it in)

I found these two recipes on the Nabisco web site under Saltine Crackers. Perhaps one of these is what you're looking for; they both sound yummy.

Crunch Bars

Prep Time: 10 min
Total Time: 32 min
Makes: 16 servings

Ingredients:
35 PREMIUM Saltine Crackers
1/2 cup (1 stick) butter or margarine
1/2 cup firmly packed light brown sugar
1 pkg. (8 squares) BAKER'S Semi-Sweet Baking Chocolate, chopped
1 cup chopped PLANTERS Walnuts

Preparation:
PREHEAT oven to 400F. Place crackers in foil-lined 15x10x1-inch baking pan.

PLACE butter and sugar in saucepan; cook on medium-high heat until butter is completely melted and mixture is well blended, stirring occasionally. Bring to boil; boil 3 min. without stirring. Spread over crackers.
BAKE 5 to 7 min. or until topping is golden brown. Immediately sprinkle with chopped chocolate; let stand 5 min. or until chocolate is softened. Spread chocolate evenly over ingredients in pan; sprinkle with walnuts. Cool. Break into pieces.

OR

PREMIUM Toffee Crunch

Prep Time: 10 min
Total Time: 32 min
Makes: 12 servings

Ingredients:
35 PREMIUM Saltine Crackers
1/3 cup butter or margarine
1/2 cup firmly packed light brown sugar
6 squares BAKER'S Semi-Sweet Baking Chocolate, chopped
1/2 cup chopped PLANTERS Walnuts

Preparation:
PREHEAT oven to 400F. Line 15x10x1-inch baking pan with foil; grease foil. Spread crackers evenly into prepared pan.

PLACE butter and sugar in saucepan. Bring to boil on medium-high heat, stirring frequently. Reduce to low; boil 3 min. (Do not stir.) Immediately spread over crackers.

BAKE 7 min. Immediately sprinkle with chocolate; let stand 5 min. Spread melted chocolate over tops of crackers. Sprinkle with walnuts. Cool. Break into pieces.

Spainish Rice Casserole

Ingredients:
2 cups boiled rice
8 to 12 slices bacon (12 to 16 ounces)
1 medium to large green pepper, chopped small
1/4 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon sugar
1 medium to large yellow onion, chopped small
2 cup diced tomatoes
3 tablespoons butter

Directions:
Brown the bacon in a large frying pan until it is crisp, and then remove the strips from the pan, reserving the fat. In the bacon fat, brown the pepper and onion. Then, combine all ingredients and pour into a buttered casserole. Bake in a 375 degree oven about 30 minutes. Optional: Top with 1-2 cups shredded yellow american or cheddar cheese.
